Apple Kuchen

Use any seasonal fruit.( 7 small granny smith apples)
Crust:
1 stick unsalted butter - room temp
1/4 cup sugar
1 large egg - room temp
1-1/2 teaspoon vanilla
1 cup all purpose flour
1/4 tsp salt ( not coarse kosher)
1/2 tsp baking powder
1/4 cup sugar mixed with 1 generous tsp cinnamon
Extra flour for hands
Sweetened cinnamon cream (?)

Preheat oven to 350 deg.  Spray a 9" springform pan and line bottom with parchment.
Mix flour, slat and baking powder - set aside.

On medium speed, cream butter and sugar until fluffy and light. ( color will lighten)
Beat in egg and vanilla. Mixturewill look curdled. On low speed, sprinkle in flour mixture and beat
just until combined. Mixture will be sticky and soft. Put mixture into middle of springform pan and with
floured hands gently pat mixture over bottom and up 1" on sides.

Fruit filling:

Peel , core and cuti in half granny smiths ( not red delicious) to fill top of crust. Poach halves in in small amount of water - until tender crisp. Do not overcook. ( do not poach plums or peaches).

Drain well and place on top of crust. Rounded sides up.  Sprinkle with sugar mixture and bake 35 -4 0 minutes until golden brown.

Serve warm. Sweetened cream = about 2-3 tablespoons confect. sugar, 1/4 tsp cinnamon per each cup of cream.
