Mankoush, Flat Bread with Zahtar

Ingredients

(6 servings)

Oregano ½ cup

Sesame seeds ½ cup

Sumac 1 teaspoon

Dry yeast ½ teaspoon

Iced sugar 1 teaspoon

Flour 450 g.

Olive oil 1 ½ cups

Milk powder 1 tablespoon

Salt


Preparation

Combine oregano (or zahtar which is a type of wild oregano), roasted sesame seeds, sumac and 1 teaspoon of salt and obtain a “zahtar” mixture. Set aside.

In a large bowl, melt dry yeast with iced sugar and ¼ cup of hot water.

Combine 1 cup olive oil, salt and milk powder with the flour. Gradually add 1 cup of cold water and knead until you obtain a soft dough.

Cover with damp tissue and let stand at room temperature until dough grows to double its size (at least 1 hour).

Heat oven at 200 C.

Separate dough in six even portions. On a floured surface, open them to 10 cm in diameter.

Add ½ cup of olive oil to zahtar mixture. Spread the paste you have obtained over the pitas. Make holes with a fork to avoid inflating.

Grease an oven tray. Place in the pitas and bake for 15 minutes.

Serve hot.
