Tomato Sauce ( Plum) 2 cups sauce

3 tablespoons extra-virgin olive oil
1 to 2 tsp minced fresh garlic
12 - 15 plum tomatoes. seeded and peeled and chopped ( or 1 28 oz can)
1 bay leaf
pinch or two of sugar
salt to taste

Heat the olive oil in a heavy saute pan. Add garlic and saute until just golden.
Add tomatoes, sugar and bay leaf.
Cook on moderate heat for 10 minutes. stir often.
Add some salt
Set aside - remove bay leaf.
suggest 4 days in fridge or 2 weeks frozen.
