Fiesta Chuck Roast
Prep Time: 10 minutes
Cooking Time: 4-6 hours
Ingredients
4-5 pound organic, natural chuck roast (preferably grass fed)
1 small onion chopped
1 tsp ground cumin
1 clove garlic, minced
12 – 16 ounce jar of “no-vinegar” organic salsa
Directions
Put a 4-5 pound chuck roast in the slow cooker. Sprinkle it with salt and pepper. Add 1 Tb. Onion Powder or the small onion, 1 tsp. cumin, and 1 clove of garlic. Pour the salsa over the top and cook on high for 4-6 hours until the roast is falling apart.
Serve over broken organic tortilla chips – soup style. Or, serve on a bed of lettuce with a few broken tortilla chips thrown in for crunch. Sooo good! I also topped mine with a big dollop of fresh guacamole. You could also add in some frozen corn, black beans, or any other Mexican type
veggie during the last 30 minutes.
