Chive Butter
It is late spring and the chive are blooming with flourish. There are numerous ways to make the most of this herb. Our favorite is Chive Butter. It offers a fresh flavor to any savory dish you add a bit of butter to.
•1/2 cup butter (if you prefer a non dairy product, use Soy Garden from Earth Balance)
•1/4 cup fresh chopped Chives
Cut fresh chives using kitchen scissors. In a medium, non reactive bowl mash the chives and butter with a fork. Microwave for 30 sec to help infuse flavor. Allow to cool.
If you are using pats of butter for a recipe, place cooled butter on a sheet of waxed paper, spread to 1/4 inch thick and cut with cookie cutters. The odd bits can be put back in a small bowl, microwave for 30 sec to melt back into the shape of the bowl for easily spreadable butter.
