VANILLA ICE CREAM

2 cups half and half
2 cups cream
1 fresh vanilla bean
add 9 yolks ( separated from whites)
1 cup of brown sugar

bring vanilla and cream to steaming ( not boiling).
Add slowly 1 cup of cream mixture to yolks ( yolks should be hand mixed) until
mixture is warm. Add rest of cream as you have mixture back on stove to keep warm ( steaming only - not boiling).

Chill over night and then use Ice Cream Maker to bring to fruition.
