Comforting Banana Pudding

1 cup sugar
1 tbsp cornstarch
1 1/2 cups milk
1 egg beaten
1/4 tsp vanilla
8 vanilla wafers
1 large banana sliced

In saucepan , combine sugar and corn starch, graduallystir in milk until smooth.
Cook and stir over medium-high heat until thickened and bubbly. Reduce Hit, cook and stir
2 minutes longer. Remove from heat. Stir 1 cup hot mixutre into egg, return all to pan and bring to a gentle boil. Remove from heat and stir in vanilla.

Cool in fridge for 15 minutes.

Layer banana's and wafers in parfait glasses - top with pudding.
Yield - 2 servings.
