Italian Roast Pork Recipe
ngredients
1-1/4 pounds pork tenderloin
2 medium cloves garlic, crushed through a press
2 tablespoons chopped fresh sage or 2 teaspoons rubbed dried sage
2 teaspoons olive oil
Salt and freshly ground black pepper to taste
Preparation
Preheat oven to 400 degrees F. Line a baking pan with foil. Remove fat from pork. Mix garlic and sage together. With a sharp knife, make several deep incisions in pork and insert a little of the garlic-sage mixture in each one. Brush meat with oil, sprinkle with salt and pepper and place on the baking pan in the oven. Roast for 25 minutes, or until a meat thermometer reaches 160 degrees F. Remove, cover with foil and let stand for a few minutes. Slice and serve over the lentils.
