MAISON DU MIEL'S HONEY ICE CREAM
This recipe comes from the Maison du Miel, a famous Parisian honey store — proof that simple recipes are sometimes the most satisfying.
4 plump, moist vanilla beans
4 cups heavy cream
2 cup whole milk
1 cup local honey
Flatten the vanilla beans and cut them in half lengthwise. With a small spoon, scrape out the seeds. Place the seeds and pods in a large saucepan. Add the cream, milk, and honey. Stir to dissolve the honey. Heat over moderate heat, stirring from time to time, just until tiny bubbles form around the edges of the pan, 3 to 4 minutes.
Remove from the heat and let steep, covered, for 1 hour. Cover and refrigerate until completely chilled. Remove the vanilla pods and stir the mixture again to blend. Freeze according to your ice cream maker's instructions.
