Root Beer Float Cheesecake Bars
Ingredients
- 1 box nilla wafers ( used mini)
- 1/2 cup butter, melted
- 1 -.25 oz box gelatin( Knox plain)
- 1 cup boiling root beer ( used bottled IBC root beer)
- 2 - 8 oz cream cheese, room temperature
- 2 cups whipped cream, cool whip or fresh
Instructions
- Crush the nilla wafers until it resembles fine crumbles. Melt the butter and mix Press into a 8x8 baking dish.
- In a medium bowl place the gelatin and pour in the boiling root beer. Stir until dissolved. Beat in the cream cheese until smooth. Pour into prepared crust and place in the fridge to chill.
- Allow to chill 3-5 hours or until set.
- Spread whipped cream evenly over the root beer cheesecake. Cut into squares and serve.
