Harissa

1 ounce dried hot red chili peppers
1 tsp caraway seed
1/2 tsp each: cumin seed, coriander seed
2 garlic cloves peeled
1/4 tsp salt
1 tbsp water
4 tbsp olive oil

Place dried chilies in bowl and cover with hot water. Soak for at least 1 hr.
Grind other spices togethor.
Drain peppers , pat dry and chop.
Then grind or mash togethor with garlic, spices, and salt in mortar until thick paste forms.
Add water and three tablespoons oil - mix well and transfer to jar.
Spoon remaining oil ove top and cover tighlty. Keeps for months.
Makes about 1/3 cup.
