Red Couscous

1 tbsp Olive Oil
4 Garlic Gloves minced
1/4 teaspoon Harissa
2 tsps tomato paste dissolved in 1/2 cup water
1/2 tsp paprika
1/2 tsp ground caraway seed
salt to taste
juice of 1/2 - 1 lemon
1/4 cup water
3 cups cooked couscous

Heat oil in lidded frying pan or casserole and saute garlic over low heat about 2 minutes stirring. Add Harissa and tomato paste/water, parika, caraway and salt and bring ot simmer. Cover and simmer 5 minutes stirring often. Add lemon juice, 1/4 cup water and couscous.

Mix well, adjust seasoning and transfer to serving dish.

Makes 4 servings.
