Cuban Rice and Beans ( Vegetarian)
30 ozCanned Balck Beans, drained and rinsed
2 cups long grain cooked white ( or brown) rice
4 scallions chopped
2 medium tomatoes diced
1 yellow squash diced
1 jalapeno seeded and minced
2 tbl canola oil
1 lime juiced
2 tbl chopped cilantro
2 tsp dried oregano
1/2 tsp ground cumin
1/2 tsp black pepper
1/2 tsp salt
Combine all ingredients in large mixing bowl - chillfor at least 1 hour.
Tip - Add 2 roasted and seeded red bell peppers
