Pfurray Chicken Mango Yellow Curry
In a 2 quart oval crockpot add:
** 2 Yellow Curry Sauce jars ( Wild Oats - about 10 oz each)
** 1 1/2 Oriental Veggie Blends ( Wild Oats - frozen - Seapoint farms 16 oz; Edamame, mushroom, baby yellow corn, carrots, pea pods , water chestnuts, bamboo shoots)
** 3 larger roma tomatoes ( slice in half and then into 1/4 inch slices)
** 1- 2 cups water
** about 1 cup of frozen mango chunks ( wild oats)
** 3 -4 frozen chicken breasts - thaw enough to cut into 1/2 inch pieces
Cook on low for 1-2 hours, I placed crockpot in Convection oven for 20 minutes at end to make sure chicken was cooked. Longer time/ higher temp in crockpot should be fine as well.
Rice - frozen microwave packets ( brown or white) at Wild Oats. Microave for 3 minutes.
